O’Hara’s Beef Cottage Pie

Traditional beef cottage pie, beautifully paired with our Nitro Irish Stout. A true depth of Irish flavour created by @danpkeane Head Chef @stack_a_restaurant

Ingredients for potato top
6 Large rooster potatoes peeled and cut into chunks
200g butter
Salt
Ground white pepper
50g Finely Grated parmesan cheese

Ingredients for pie filling
500g lean beef mince
3 carrots finely chopped
4 sticks celery finely chopped
3 onions finely diced
5 cloves garlic
2 bay leaves
20g thyme finely chopped
30g parsley finely chopped
1liter beef stock
2 tblsp of cornflour
Salt
Black pepper
30ml Olive oil

Method
• Warm a large saucepan and add a little light olive oil, when the saucepan is up to temperature add the beef mince and stir until it is all broken and lightly browned. Once browned remove from the saucepan and set aside.
• In the same saucepan add the vegetables, thyme, and bay leaves and sweat until lightly sweetened and the onions have turned translucent. Once this has happened add the beef back in and cook for a further 3-4 mins
• At the same time place your potatoes in a saucepan top with cold water add a pinch of salt and bring to the boil, boil for 20 mins or until flowery drain add the butter, salt, and white pepper and mash until smooth. Taste to ensure seasoning is correct
• Once the veg and beef is ready add the beef stock and simmer for 30 mins.
• Add the cornflour and stir constantly until the filling has thickened up, once thicked correct the seasoning with salt and black pepper and stir in the chopped parsley.
• Drain off the excess gravy, keep and set aside for serving. Once drained pour the mix into a pie dish spreading it out evenly. Top the mix with your mashed potato leaving jagged little peaks, sprinkle the top with the grated parmesan.
• Cook in a preheated oven @ 180c for 30 mins if hot already 50 mins if cooking from cold. Warm up the excess gravy and serve.
